My first food experience in China was Dim Sum in Shanghai. This book has many of the foods we sampled, plus a wonderful variety of others. Recipies are grouped in the following categories: yeast dough, hot water dough, flaky dough, cakes and mochi, and miscellaneous. The directions are clear and there is help in identifying ingredients. Every recipe is pictured -- with very careful and artistic presentations. There are also helpful step by step pictures when words just won't do. Most of the measurements are by weight in grams, so a scale is necessary.
